Tomato Soup With Meatballs

Time: 40 minutes
20 minutes /if using frozen cevabcici instead of making meatballs, like I did/

Ingredients for ca 20 MEATBALLS : 

  • 600 g minced beef meat
  • 1 onion
  • 1 garlic clove
  • 5 sun-dried tomatoes
  • 1 tbsp dijon mustard
  • 1 egg
  • 1 tbsp dried thyme
  • sea salt, black pepper to taste

Kitchen equipment for making the meatballs:

  • Hob
  • Frying pan
  • Knife and cutting board
  • Big bowl for blending

TIP: Make double portion of the meatballs and freeze the other half. Meatballs tastes great with ratatouille, zucchini-pasta, beans or as a snack. Warm or cold.  

How to make the meatballs:

  1. Chop the onion, garlic and dried tomatoes.
  2. Blend all these three with minced meat and mustard.
  3. Knack the egg and add it to the blend.
  4. Taste the blend with salt, black pepper and thyme.
  5. Make small balls or other shapes you like and fry them so they get nice colour.

Ingredients for 4 portions of TOMATO SOUP:

  • 1tbsp coconut oil
  • 1 onion
  • 1 garlic clove
  • 1 dl water
  • 1 litre crossed tomatoes
  • 1/2 can coconut milk
  • 1 tbsp tomato puree
  • 1 tbsp/ 1 cube of vegetable broth
  • sea salt, pepper, basil and oregano to taste
  • optional: coriander, red pepper, nutmeg, chilli

Kitchen equipment: 

  • Hob
  • Big pot
  • Spoon
  • Cutting board & knife

 How to: 

  1. Peel and chop finely onion and garlic. Fry those in coconut oil.
  2. Bring crossed tomatoes, coconut milk, broth and water to boil. Taste with salt, pepper, basil and oregano.
  3. Let to simmer for about 10 minutes.
  4. Add meatballs into the tomato soup. Optionally, decorate with fresh basil.
  5. Taste it and think about upgrades.
  6. Tidy up.

TIP: Add a grated carrot and apple for more filling version. For luxury version eat with hard cheese.
