Cottage Cheese Pie

Cottage Cheese Cake


Time: 70 minutes

Ingredients for the dough:

  • 1,8 dl gluten-free flour-mix
  • 0,5 tsp baking powder
  • 0,4 dl  icing sugar
  • 25g butter
  • 1 tbsp honey
  • 1 egg
  • 1/4 dl milk
  • pinch of salt

Ingredients for the cottage cheese filling:

  • 170g creamy cottage cheese (2/3 of 250g package)
  • 1/2 cup of milk
  • 1/8 cup of oil
  • 1 egg
  • 10 g vanilla pudding powder
  • 1/8 cup of icing sugar
  • 2 sticks rhubarb – chopped into 1cm bits

Kitchen equipment: 

  • Cup – 250 ml
  • dl measuring cup
  • Tea spoon
  • Table spoon
  • 2x 2 l  Bowl

 How to: 

  1. Set the oven to 180 °C.
  2. Blend all the ingredients for the dough.
  3. Grease a pie-form and fix it with dried coconut and pour the dough in.
  4. Blend all the ingredients for the filling except rhubarb and pour it over the dough.
  5. Decorate with bits of rhubarb and put in the oven for ca 30 min.
  6. Taste it and think about upgrades.
  7. Tidy up.
